If the GM fires him, you are liable. 

Just want to say that good employees are not drunks.  I can count on a good employee, not on a drunk.  That is baggage they bring to the party with them, totally unreliable.

I would not fire him as his condition (if your government is as lame as Oregons) is considered a disability and you could be subject to wrongful discharge, reinstatement and paying for his alcohol treatment plan.  But, you could have no work for him.  That is different.  Can't help it if you have all the business that you can handle.  He lacks the initiative to prove you lying.
Are you in a high paying business or are you just a self employed low paid grunt who thinks this business provides dignity?

You have got to love this one.  Being concerned about employees being bondable I do insist no felons.  So I posted the following on craigslist:

" Will train. Must have reliable transportation and able to lift 50 lbs. No druggies, alkies, and no ex-cons."

I received the following email today:
"hay ashole you dont pay enough to ask for those requirements some ex-cons serve this county in the battle field b atch
what have you done for this country"

Anybody want to hire someone who seems to need anger management?

I thought it was funny.  Tell you though the ad may not be getting many responses and most of college kids who can show up if they don't get invited to some getaway or even a 15 year old but this one gave me a good laugh.

Dealing with unreliable help can be a real headache, especially when you're trying to impress a client.

As for redeeming yourself with the restaurant, honesty is the best policy. Apologize sincerely, explain the situation, and assure them you're committed to finishing the job thoroughly. Offer a discount or some extra service to make amends. customers appreciate transparency and effort.

As for your employee "hanging-you-out-to-dry" I would pull the plug on this guy and replace him asap.
When I clean it, I mean it! :)
