Tomorrow I have a couple of white cotton dining room chairs to clean. The problem is its REALLY dirty. It has food spills, grease, and drink spills all over the place.

My question is...What procedures should I take to make it come out as clean as possible??

Sounds like a good time to visit the nearest " Brick Store " or Sears in U.S.A

I would be using haitian cotton cleaner...
 
vac first
 
apply cleaner
 
agitate withe white terry cloth
 
extract
 
double dry vac....

My main concern is Cellulosic browning. I want to get these white cotton chairs CLEAN without browning it out.

I would spray Chemspec Heavy Duty Soil Lifter on it, then agitate with a dry absorbent terry cloth towel, then apply Prekleen for Upholstery, then extract with textile rinse.
Whatever you do don't use a carpet prespray because the wetting agents will push the oils down into the cotton and then you are screwed.
Don't make any promises to the customer. Think of all those polo shirts you have got food stains on at the restaurant. Do the stains always come out in the laundry? No they don't and they may not on the upholstery either.
